A frittata is similar to a crustless quiche where eggs are mixed ingredients and baked until the eggs are set. In the spring I like to make them with fresh asparagus and this is my favorite recipe! This frittata is seasoned with parmesan, green onions and dill and cheese! (I tend to go for cottage cheese but I also enjoy shredded gruyere or crumble chevere!) This recipe is as easy as mixing all of the ingredients, pouring them into a pan and baking it!
Asparagus and Dill Frittata
A light and tasty frittata with cottage cheese, asparagus and dill!
ingredients
- 8 large eggs
- 1 cup cottage cheese
- 1/4 cup parmigiano reggiano (parmesan cheese), grated
- 8 ounces asparagus, trimmed and cut into bite sized pieces
- 2 tablespoons dill, chopped (or 1 teaspoon dried dill)
- 2 green onions, sliced
- salt and pepper to taste
directions
- Mix the eggs, cottage cheese, parmesan, asparagus, dill, green onions, salt and pepper and pour into a greased 8-10 inch oven safe pan.
- Bake in a preheated 375F/190C oven until the eggs have set, about 25-30 minutes.
Option: Add 1 teaspoon lemon zest.
