A tasty bowl with BBQ chicken, Mexican street corn salad and chipotle roast sweet potatoes!
These bowls have it all! Sweet and spicy BBQ chicken, tasty Mexican corn salad, tender chipotle roast sweet potatoes, tangy pickled red onions, and cool and creamy guacamole, all in a rice and bean bowl! This recipe is basically a combination of a few of my favourite recipes all thrown into one tasty bowl! It takes a bit of time to make everything but it’s well worth it!
BBQ Chicken, Street Corn and Chipotle Roast Sweet Potatoes Bowls

A tasty bowl with BBQ chicken, Mexican street corn salad and chipotle roast sweet potatoes!
ingredients
- 1 pound chicken, cooked and shredded (warm)
- 1/3 cup BBQ sauce (link)
- 2 cups rice, cooked (from 1 cup uncooked)
- 2 pounds chipotle roast sweet potatoes (link) (warm)
- 2 cups mexican street corn salad (link)
- 1 cup guacamole (link) or avocado
- 1/4 cup pickled red onions (link) or red onion
- 1 (15 ounce) can black beans, rinsed and drained
directions
- Mix the chicken and BBQ sauce.
- Assemble the bowls, divided between 4, and enjoy!
Option: Garnish with cilantro
