Chicken Caesar Salad

I could not experiment with anchovies without making a caesar salad. The anchovies in most caesar salad dressings had kept me from trying to make my own dressing but I was tired of using store bought. Now that I had tried the anchovies and liked them it was time to make my own caesar salad dressing. When looking for recipes I came across two main different types: those that used a raw egg yolk and those that used mayonnaise. Instead of trying to choose which one to try, I tried them both. I used the roasted garlic croutons that I had made earlier in the salad. I also decided to add some chicken to turn the caesar salad into a light meal. Both of the dressings were really easy to make. The homemade caesar salad dressing was good! Easily as good as any restaurants dressing that I have had and better than most. I liked both dressings though I thought that the one with mayonnaise had more flavour. This was the first time that I used the anchovies without cooking them. Once again they were not overpowering and they added that something special to the dressing.

Chicken Caesar Salad

Prep Time: 5 minutes Total Time: 5 minutes Servings: 2
ingredients
  • 1 romain lettuce (cut into bite sized pieces)
  • 1 cup chicken (cooked and shredded or grilled and sliced)
  • 1 cup roasted garlic croutons
  • 1/4 cup Caesar dressing
  • 1/4 cup parmigiano reggiano (grated)
  • fresh ground pepper to taste
directions
  1. Toss everything in a large bowl.

ingredients
  • 2 cloves garlic (chopped)
  • 4 anchovy fillets (chopped)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon lemon juice (or white wine vinegar)
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Dijon mustard
  • 1 large egg yolk
  • 1/4 cup extra-virgin olive oil
directions
  1. Mix everything in a bowl.

    You’re being seriously thorough with your anchovy phase!:) I seriously love Chicken Caeser Salad, have had some average as heck ones in cafes though. Yours looks gorgeous – I love how enormous the croutons are.

    Kevin, it’s wonderful how you really go for something and try loads of different ways of using the same (‘new’) ingredient. I often make chicken ceasar salad wraps for a quick midweek dinner, will have to give the dressing a go.

    I have always been afraid to use anchovies because of how a lot of people think they are nasty, but its cool to hear that they worked out nicely in the dressing. Your salad looks so yummy!

    Kevin, I prefer the egg yolk recipe as I have one similar and as long as the eggs are fresh…little chance of salmonella.

    I’ve always wanted to make my own Caesar salad dressing, but I promised my husband I wouldn’t bring anchovies into the house (he has a major issue with them). I am laughing on the inside every time he enjoys a Caesar salad at a restaurant!

    Looks so good, I love Caesar Salads. Do you think instead of choped anchovies, I could use anchovy paste? I bought it to make a different dressing and now don’t know what to do with it!

    Sounds great, except i could never really get “into” anchovies and would probably leave them out but kudo’s to those who can enjoy them! Those croutons look fantastic, too!

    I really love the use of anchovies in Caesar Salad, but I’ve heard that it is a misinterpretation because the original chef to do it actually used Worchestershire sauce, which is made of anchovies…
    So many chefs claiming they are the first to do things… I’m happy to keep using the fillets 🙂

    Love caesar salad. It’s also great served like a taco made with a thin pizza crust that’s been lightly baked with olive oil and parmesan.

    My love for anchovies baffles everyone I know 🙂

    Caesar Salad shows up about once a week in our household because it’s the only salad my kid will eat willingly. You may try a spicy version using chipotle in adobo sauce for a tasty variation.

    I LOVE Caesar salad… I had some people at work grossing out because they had no idea the dressing contained anchovies… and my bf who says fish makes him sick can eat a giant bowlful of this salad 😀
