Candy Cane White Chocolate Chip Blondies

Cookie bars that are crispy on the bottom and edges and soft and chewy on the inside, stuffed with plenty of white chocolate chips and peppermint candy cane bits!

Peppermint white chocolate chip cookies are one of my favourite holiday treats and this recipe takes their flavours and places them in bar form, aka blondies. Candy cane bits melt in the oven so the cookies can spread a bit and the melted candy cane forms a hard/crunchy bottom on the cookies, which some do not appreciate, and making them in bar form avoids both of those issues! These peppermint candy cane white chocolate chip blondies are even easier to make, have all of the same, amazing flavours, with more of the soft chewy center compared to crispy edges! The perfect addition to any holiday cookie platter!

Candy Cane White Chocolate Chip Blondies

Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Servings: 24

Cookie bars that are crispy on the bottom and edges and soft and chewy on the inside, stuffed with plenty of white chocolate chips and peppermint candy cane bits!

ingredients
  • 1 cup butter, melted and cooled
  • 3/4 cups sugar
  • 3/4 cups brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract (optional)
  • 2 cups all purpose flour (gluten-free for gluten-free)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup candy cane bits
  • 1 cup white chocolate chips
directions
  1. Mix the butter, sugar and brown sugar before mixing in the eggs and vanilla extract in a large bowl.
  2. Mix the flour, baking powder, and salt in another bowl.
  3. Mix the dry mixture into the wet mixture.
  4. Mix the white chocolate chips and candy cane bits into the batter.
  5. Spread the batter over the bottom of a greased (or parchment paper lined or foil lined) 13×8 inch baking pan and bake in a preheated 350F/180C oven until a knife poked into the center comes out clean, about 18-22 minutes.
  6. Let cool, slice and enjoy!
Option: Add 1/4 teaspoon peppermint extract, along with the vanilla extract.
Option: Replace the white chocolate chips with milk chocolate chips or dark chocolate chips.
