This beef and potato soup is pure comfort food in a bowl! It’s a super simple dish using ground beef along with plenty of vegetables including: onions, celery, carrots and potatoes that’s seasoned with garlic, paprika, herbs and worcestershire sauce. The final element is sour cream and cheddar cheese which melts into the broth! This recipe comes together quickly making it the perfect meal any night of the week, even busy work nights!
Cheesy Beef and Potato Soup
An easy beef and potato soup in a tasty cheesy broth!
ingredients
- 1 pound ground beef
- 1 cup onion, diced
- 1 cup celery, diced
- 1 cup carrot, diced
- 4 cloves garlic, chopped
- 1 teaspoon paprika (optional)
- 1/4 cup flour all-purpose (gluten-free for gluten-free)
- 4 cups beef broth
- 2 pounds (~4 cups) gold potatoes, peeled and diced
- 2 teaspoons Italian seasoning (link) (optional)
- 1 tablespoon worcestershire sauce
- 1/2 cup sour cream
- 2 cups cheddar cheese, shredded
- salt and pepper to taste
directions
- Cook the beef in a large saucepan, over medium-high heat, breaking it apart as it cooks, before setting aside and reserving 4 tablespoons of grease in the pan.
- Add the onion, celery, and carrots and cook until tender, about 7-10 minutes.
- Add the garlic and paprika , mix, and cook until fragrant, about a minute.
- Sprinkle in the flour, mix well and cook for a minute.
- Add the broth, beef, potatoes, Italian seasoning, and worcestershire sauce, bring to a boil, reduce the heat and simmer until the potatoes are tender, about 20 minutes.
- Add the sour cream and cheese, mix, and let the cheese melt into the broth.
- Season with salt and pepper to taste and enjoy.
Option: Add 6 ounces bacon, cooked and crumbled.
Option: Replace the Italian seasoning with 1 teaspoon thyme.

Option: Replace the sour cream with 1/2 heavy/whipping cream or 4 ounces cream cheese.
Option: Add 1 teaspoon onion powder.

Option: Omit the flour and optionally use 1 tablespoon cornstarch as a thickener. (Add the cornstarch mixed into 1 tablespoon of cool water near the end.)
