Chicken fajitas are one of my favorite meals and this one-pan pasta version with its cheesy sauce is even better than the original! The recipe starts out with cooking ground chicken along with onions and plenty of bell peppers before adding seasoning, broth and pasta and cooking until the pasta is tender. Cheese and sour cream are mixed into the sauce before topping with even more cheese and letting it melt on top! This one-pan dish comes together in about 45 minutes making it a good option for any night of the week, including busy work nights, and it’s sure to please the whole family!
Cheesy Ground Chicken Fajita Pasta
All of the flavours of chicken fajitas in a simple and tasty pasta that’s cooked in one-pan and topped with plenty of melted cheese!
ingredients
- 1 tablespoon oil
- 1 pound ground chicken (turkey)
- 1 onion, sliced or diced
- 1 green bell pepper, sliced or diced
- 1 red bell pepper, sliced or diced
- 1 yellow bell pepper, sliced or diced
- 3 cloves garlic, chopped
- 2 tablespoons taco seasoning (link)
- 2 1/2 cups chicken broth (link)
- 1 (15 ounce) can diced tomatoes
- 8 ounces pasta (gluten-free for gluten-free)
- 1/2 cup sour cream (or heavy cream, or 4 ounces cream cheese) (optional)
- 2 cup cheddar cheese (or monetary jack), shredded
- 1 tablespoon cilantro, chopped
directions
- Heat the oil in a large pan over medium heat, add the chicken and cook, breaking it apart as it cooks, for 5 minutes.
- Add the onion and bell peppers and cook until tender, about 10 minutes.
- Add the garlic and taco seasoning and cook until fragrant, about a minute.
- Add the broth, tomatoes, and pasta, bring to a boil, reduce the heat and simmer until the pasta is tender, about 8-10 minutes, mixing every few minutes.
- Mix in the sour cream and half of the cheese and let it melt into the sauce.
- Sprinkle on the remaining cheese and let it melt. (Cover with a lid and let it cook for 2-3 minutes or throw it under the broiler.)
Option: Use ground beef (or sliced beef) and beef broth instead of chicken and chicken broth.
Option: Add 1 jalapeno pepper, diced, along with the bell peppers.
Option: Add 1 poblano pepper, diced, along with the bell peppers.
Option: Replace the diced tomatoes with 2 cups of salsa.
Option: Serve topped with your favourite fajita toppings and sides!
