I am a fan of kielbasa (smoked) sausage and this pasta is a quick and easy way to enjoy some! The recipe is as easy as frying the sausage, cooking an onion and bell pepper before adding tomatoes, broth and pasta and simmering until the pasta is cooked! When the pasta is done you add cream and cheese before enjoying!

- 2 teaspoons Italian seasoning (link)
- 8 ounces pasta (gluten-free for gluten-free)
- 1/2 cup heavy/whipping cream (or milk)
- 2 cup cheddar cheese (or monetary jack), shredded
- salt and pepper to taste
directions
- Heat the oil in a large pan, add the kielbasa and cook, over medium heat, until browned on both sides, about 5-8 minutes, before setting aside.
- Add the onion and pepper and cook until tender, about 5-8 minutes.
- Add the garlic and cook until fragrant, about a minute.
- Add the broth, tomatoes, Italian seasoning, and sausage, bring to a boil, reduce the heat and simmer until the pasta is tender, about 10 minutes, mixing a few times as it simmers.
- Turn off the heat, add the cream and cheese, mix and let the cheese melt into the sauce.
- Season with salt and pepper to taste and enjoy.
Option: Use your favourite smoked sausage! (Andouille sausage is really good in this!)
Option: Use cajun seasoning (link).
Option: Use a different melty cheese.
Option: Replace the cream with sour cream.
Option: Add 1 teaspoon paprika, along with the garlic.

Step 4, you want to add the pasta, right?
