I am a fan of chicken caesar salads and it works well in a sandwich! This sandwich is basically a simple caesar salad with seasoned chicken in a bun. The chicken is thinly sliced and seasoned with garlic, salt, pepper, paprika, and cayenne. (I like to use mayo instead of oil for an extra bit of flavour.) This sandwich is great with the seasoned chicken and caesar salad but I like to add pepperoni for an extra hit of flavour! (You can also add bacon or sun dried tomatoes!)
Chicken Caesar Salad Sandwich
All of the flavours of a caesar salad in a sandwich with tender seasoned chicken and pepperoni!
ingredients
- 1 pound boneless and skinless chicken breasts or thighs, cut into bite sized pieces
- 2 tablespoons mayonnaise (or oil)
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1/2 teaspoon cayenne
- 2 cup romaine lettuce, thinly sliced
- 1/4 cup caesar dressing (link)
- 2 tablespoons parmigiano reggiano (parmesan cheese), grated or shaved
- 1/2 cup croutons, crumbled
- 4 buns or 8 slices of bread (gluten-free for gluten-free)
- 2 ounces pepperoni
directions
- Marinate the chicken in the mixture of mayo, garlic, salt, pepper, paprika, and cayenne, covered, in the fridge, for 20 minutes to overnight.
- Cook the chicken in a skillet over medium heat until cooked through, about 10-15.
- Mix the lettuce, dressing, parmesan, and croutons.
- Assemble the sandwich with pepperoni, chicken, caesar salad and enjoy!
Option: Add 1 large tomato, sliced.
Option: Add 1 avocado, diced.
Option: Add 1/4 cup red onion thinly sliced.
