I am a fan of chicken parmesan and sloppy joes and this combination is even better! This recipe is pretty simple with ground chicken in a marinara sauce (link) in buns with melted cheese! I like to kick things up a bit with the buns by making them garlic bread style, by slathering them with garlic butter and toasting them! When the buns and chicken marinara sauce are ready, the sloppy joes are assembled along with parmesan and mozzarella which melt on top. I like to add fresh basil for some freshness but it is completely optional! If you are missing the crunchy breadcrumb coating that chicken parm usually has, you can toast up some panko bread crumbs, mixed with butter, garlic and oregano, and sprinkle it into the sandwiches!
Chicken Parmesan Sloppy Joes
All of the flavours of chicken parmesan in sloppy joe form!
ingredients
- 1 tablespoon olive oil
- 1 pound ground chicken (or beef or turkey)
- 1 small onion, diced
- 3 cloves garlic, chopped
- 1 1/2 cups marinara sauce (link)
- 2 teaspoons oregano (or Italian seasoning (link))
- 1/4 cup parmigiano reggiano (parmesan), grated or shaved
- 1 cup mozzarella, shredded
- 1 tablespoon basil, thinly sliced (optional)
- 1/4 cup butter, softened
- 2 cloves garlic, minced/grated
- 1 tablespoon parmigiano reggiano (parmesan), grated
- 1 teaspoon parsley, chopped
- 4 buns (gluten-free for gluten-free)

- Heat the oil in a large pan over medium heat, add the chicken and onion and cook, breaking the chicken apart as it cooks, until cooked.
- Add the garlic and cook until fragrant, about a minute.
- Add the marinara sauce and oregano and simmer for 5 minutes.
- Divide the chicken mixture between the garlic bread buns, top with the parmesan and mozzarella. (The cheese should melt on the still hot sauce, but you can broil it or warm it in the oven.)
- Mix the butter, garlic, parmesan, and parsley.
- Spred the garlic butter on the insides of the buns and lightly toast.

Option: For crunch: Mix 2 tablespoons of melted butter, 1/4 teaspoon garlic powder, 1/4 teaspoon oregano, and 1/2 cup panko bread crumbs, and lightly toast in a pan over medium heat before sprinkling on top of the chicken mixture in the buns!
