Peri peri sauce is a sauce made with sweet roasted red peppers, spicy chilies and seasonings; it’s often used as a marinade for meats and it also works well as a sauce for pasta! This is a super simple pasta recipe with chicken, onions, red bell peppers, peri peri sauce, tomato paste, cream, parmesan and baby spinach. It only takes a few minutes to make the sauce, about the same amount of time that it takes to bring a pot of water to a boil and cook the pasta, so it makes for a quick meal that’s perfect for busy work nights!
Creamy Peri Peri Chicken Pasta
A tasty chicken pasta in a creamy peri peri sauce!
ingredients
- 8 ounces pasta (gluten-free for gluten-free)
- 1 pound boneless and skinless chicken breasts (or thighs), cut into bite sized pieces
- 1 tablespoon olive oil
- 1 onion diced
- 2 bell peppers, diced
- 2 cloves garlic, chopped
- 1 tablespoon tomato paste (optional)
- 1 cup peri peri sauce (link)
- 1 cup cream (or milk or almond milk or coconut milk)
- 1/4 cup parmigiano reggiano (parmesan cheese), grated
- 4 ounces baby spinach (optional)
- 1 tablespoon lemon juice (optional)
- 2 tablespoons parsley, chopped
- salt and pepper to taste
directions
- Start cooking the pasta as directed, reserving some of the cooking water.
- Meanwhile, heat the oil in a large pan over medium-high heat, add the chicken and cook, about 8-10 minutes.
- Add the onion and bell pepper and cook until tender, about 5-8, minutes.
- Add the garlic and tomato paste, mix and cook until fragrant, about a minute.
- Add the peri peri sauce and cream, bring to a boil, reduce the heat and simmer for 5 minutes.
- Reduce the heat, add the parmesan, mix and let the cheese melt into the sauce.
- Add the spinach, mix and let the spinach wilt.
- Mix in tha pasta along with enough of the reserved cooking water to get the sauce to the desired consistency.
- Mix in the lemon juice and parsley and season with salt and pepper to taste.
Option: Add 1 teaspoon smoked paprika.
Option: Add 1 teaspoon oregano.
Option: Add 1 (14.5 ounce) can diced tomatoes.
Option: Garnish with crumbled feta or chevre.
Option: Garnish with fresh basil!
