Feta is one of my favourite cheeses; I always have a tub of it in my fridge! When you bake, or heat, the feta it tends to retain its shape but it melts and gets so nice and creamy and good! This recipe places feta on top of crispy chicken and bakes it until lightly golden brown before serving it topped with hot honey! The combination of crispy chicken, creamy and salty feta, sweet, spicy and tangy hot honey is simply divine! The hot honey is the simple mixture of honey, chili pepper flakes, and hot sauce, which usually contains vinegar for some tang!
Crispy Hot Honey Feta Chicken
Chicken coated in crumbled corn flakes, baked until crispy and topped with melted feta before pouring on hot honey!
ingredients
- 1/2 cup all-purpose flour (gluten-free for gluten-free)
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 large eggs, beaten
- 2 tablespoons hot sauce
- 2 cups corn flake crumbs (or breadcrumbs) (gluten-free for gluten-free)
- 1/4 cup parmigiano reggiano (parmesan cheese), grated
- 1 pound boneless and skinless chicken breasts or thighs, pounded thin
- 6 ounces feta, crumbled
- 1/4 cup honey
- 2 tablespoons hot sauce (such as Frank Red Hot)
- 1 teaspoon red pepper flakes
- 1/2 teaspoon (smoked) paprika

- Mix the flour, paprika, onion powder, and garlic powder in a wide bowl.
- Mix the eggs and hot sauce in a wide bowl.
- Mix the corn flake crumbs in a wide bowl.
- Lightly dust the chicken in the flour mixture, shaking off any excess.
- Dip the chicken in the egg mixture, shaking off any excess.
- Press the chicken into the crumb mixture to coat on all sides and shake off any excess.
- Place the chicken on a wire rack on a baking pan an optionally sprayed lightly with oil
- Bake in a preheated 425F/220C until golden brown and cooked (165F), about 20-30 minutes.
- Sprinkle on the feta and bake until the feta starts to lightly brown on top, about 5 minutes.
- 10 Serve topped with hot honey!
- Mix everything and let sit for a while.

This sounds like it would work wonderfully with an air fryer. Spray the chicken with oil spray, cook to desired amount of crispiness, then take out and roll in feta cheese (or sprinkle feta on chicken) and then put them back into the air fryer long enough to melt the cheese. Yum . . . already smells great! 😉
