Pizza is one of my favourite foods and this crispy tortilla skillet pizza has to be one of the quickest and easiest ways of enjoying pizza! Normally to make pizza you start off by making a pizza dough which you need to make, knead, let rise and then bake, all of which takes time so using an already made tortilla is quicker and easier! Using the tortilla for the crust gives you a really nice and thin crust and the only thing that you really need to worry about is getting that tortilla crispy, so that you can pick up the slices of pizza. I have experimented a lot with trying to get the tortilla crispy and the best way that I have found is to start off by heating a cast iron skillet until it is very hot and placing the tortilla into the skillet just before topping with the sauce and cheese and placing under a broiler to melt the cheese. Starting out with a hot cast iron skillet ensures that the tortilla gets crispy, without burning, while the cheese melts on top under the broiler! Of course you can top these crispy tortilla skillet pizzas with your favourite pizza toppings!
Crispy Tortilla Skillet Pizza
A quick and easy tortilla pizza cooked until crispy in a cast iron skillet!
ingredients
- 1 teaspoon oil
- 1 10 inch tortilla
- 1/4 cup pizza sauce
- 1 cup mozzarella cheese, shredded
- 1 tablespoon parmesan cheese, grated
- 8 slices pepperoni
directions
- Heat the oil in a cast iron skillet over medium-high heat, remove from heat, add the tortilla, spread on the sauce, top with the cheese and pizza topping an place it under the broiler in the oven until the cheese has melted, about 2-4 minutes.
Note: If the tortilla is not perfectly crispy, return the pan to the stove over medium heat until it is crispy.

We eat something similar at restaurants in Arizona. Usually with cheese and green chilis though chorizo is quite popular on them too. They’ll put them on top of flames to keep them warm. Cheese crisps. 🙂 I still make them at home a lot. Though I’m developing a fondness for making rice paper pizzas this way too.

You can use other kinds of oven safe pans, check the temperatures that the pan is safe to in the oven. Enjoy!
I make this using a low carb tortilla, a low carb pizza sauce and it is wonderful. I preheat my oven to about 400 and place the tortilla on a pizza pan or a baking sheet pan. I cook the tortilla alone in the oven for 5-8 minutes until it starts to get brown, then I take it out, add my pizza sauce and toppings, add it back into the oven for about 4 more minutes until the cheese melts and it’s perfect!
did you mean one slice is 308 calories?? One cup of mozzarella cheese is over 300 calories !!

Made this tonight because I was craving pizza but wanted a healthier option. Can these be premade as frozen to reheat in a microwave? If so, that would be fantastic considering I work with 2 year olds and only have a few minutes to eat lunch.
