As much as I enjoy a roast dinner for the holidays I usually have more fun coming up with tasty ways to enjoy the leftovers! Ham is a common centerpiece of the Easter dinner and there are plenty of ways to make sure that any leftovers do not go to waste. Ham is great in soups, sandwiches and pretty much anything with eggs; speaking of which, there are also plenty of ways to enjoy any leftover hard boiled eggs from your Easter festivities! If you went for something else like a lamb, turkey or roast beef for dinner, I’ve got you covered with some tasty soups and sandwiches as well! I hope that everyone has an amazing Easter and enjoy your leftovers! I know I already have plans for mine

Kevin,
The recipes look yummy. I will be trying some soon, but I was wondering if you have any good ideas what to do with about almost 2 lbs of boneless roast leg of lamb?
Thanks,

Barb: Is this uncooked or cooked? If uncooked I like this recipe: https://alltagsgesundheit1.org/2009/01/roasted-lamb-in-coffee-sauce.html%3C/a%3E If it is cooked then gyros would be a great way to enjoy it!
Mine is cooked! I have no clue what to do with it all! – Sara H in Nunavut
You could always grind up the cooked lamb and make a Shepherd's Pie. 🙂
WOW! Thanks for sharing some very delicious looking recipes for leftovers. But seriously, who would think they're made from leftovers. So colorful and fresh looking.
