Garlic bread, warm toasty bread soaked with melted butter, garlic, parsley and parmesan, is one of my all time favourite foods and this is a way to enjoy all of its flavours in zucchini form! This recipe slices zucchini in half lengthwise and bakes them, and broils them in such a way the outside gets a little nice and crispy while the center cooks tender and melt in your mouth good! The butter and garlic mixture is spread on the still hot zucchini and melts all over it! This might just be the perfect zucchini side dish!
Garlic Butter Zucchini
Zucchini served garlic bread style; roasted and smothered in butter and garlic!
ingredients
- 2 medium zucchini, cut in half lengthwise
- 1 tablespoon olive oil
- salt and pepper to taste
- 2 tablespoon butter, softened
- 2 cloves garlic, grated/minced
- 1 tablespoon parsley, chopped
- 1/2 teaspoon lemon zest (optional)
- 1 tablespoon parmigiano reggiano (parmesan cheese), grated
directions
- Brush the zucchini on all sides with oil, season with salt and pepper to taste and place, cut side down, along the outsides of a baking sheet.
- Bake in a preheated 450F/230C oven, on the lower shelf, for 10 minutes.
- Transfer to the top oven shelf and broil for 10 minutes.
- Meanwhile, mix the butter, garlic, parsley, and lemon zest.
- Flip the zucchini, spread the butter mixture on, sprinkle on the parmesan and enjoy!
Option: Grill the zucchini!
