Grinder Pasta Salad

All of the flavours of a grinder sandwich in a creamy pasta salad!

A grinder sandwich is a sandwich filled with Italian cold cuts, such as pepperoni and salami, provolone cheese, tomato, onion, pepperoncini peppers, and lettuce tossed in a tasty dressing. This recipe is for a pasta salad with all of the same ingredients! The recipe is as easy to make as cooking the pasta and letting it cool before adding the grinder filling and tossing with the dressing!

Prep Time: 10 minutes Cook Time: 10 minutes Total Time: 20 minutes Servings: 8

All of the flavours of a grinder sandwich in a creamy pasta salad!

ingredients
    For the salad:
  • 1 pound pasta (gluten-free for gluten-free)
  • 2 cups lettuce, shredded or sliced
  • 1 cup tomato, diced
  • 1/4 cup red onion, sliced
  • 1/4 cup pepperoncini, sliced
  • 1/2 cup provolone, chopped
  • 1/2 cup salami, chopped
  • 1/2 cup pepperoni, chopped
  • For the dressing:
  • 1/3 cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 1 teaspoon oregano (or Italian seasoning (link))
  • 1 small clove garlic, minced/grated
  • 2 tablespoons parmigiano reggiano (parmesan), grated
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
directions
  1. Cook the pasta as directed on the package, drain and rinse in cold water until the pasta has cooled.
  2. Assemble the salad, toss with the dressing and enjoy!
  3. For the dressing:
  4. Mix everything well.
Option: Use your favourite salad/grinder ingredients!
Option: Add 1-2 tablespoons of the pickling juice from the pepperoncini jar!
