Lemon and Feta Vinaigrette

A fresh vinaigrette with lemon, feta, honey, dijon and oregano.

I always enjoy making my own dressings, sauces and marinades and this lemon and feta vinaigrette is my current favourite! The base of this dressing is a simple extra virgin olive oil and fresh lemon juice which is so light, bright and summery! The star of the show is the feta, which is crumbled into fine pieces, along with the fresh chopped oregano. Honey is added to balance the tartness of the lemon and the saltiness of the feta and dijon mustard helps to emulsify the dressing to keep it from separating after being mixed. This lemon and Feta vinaigrette is perfect for dressing salads, used as a marinade for meats or drizzled over grilled, steamed, or roasted vegetables!

Prep Time: 10 minutes Total Time: 10 minutes Servings: 16(~1 cup or 16 1 tablespoon servings)

A fresh vinaigrette with lemon, feta, honey, dijon and oregano.

ingredients
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • 1/4 cup feta, crumbled
  • 1 clove garlic, minced/grated
  • 1 tablespoon dijon mustard
  • 2 tablespoons honey
  • 1 teaspoon oregano, chopped
  • 2 teaspoons lemon zest
  • salt and pepper to taste
directions
  1. Mix everything well and enjoy!
Option: Use 1/2 teaspoon dried oregano instead of fresh.

    Made this yesterday for a cucumbers salad, and I like it. May tweak it a bit next time too, just to play with the flavors a bit. Thank you for sharing.
