Migas

Mexican style scrambled eggs with crunchy tortilla chips!

Migas are a Mexican style of scrambled eggs with crunchy tortillas mixed in; a super simple and tasty breakfast! This recipe starts out with onions, jalapeno and tomatoes which are cooked in a pan before adding the eggs and cheese and cooking scrambled style. When the eggs are about half way cooked, the tortilla chips are added, so that they soften a little in the remaining moisture in the eggs as they finish cooking, without getting soggy. Although it’s not traditional, I like to add cottage cheese to the eggs before cooking them. Once the migas are cooked you can serve them with your favorite Mexican style toppings! (I like salsa verde (link) and queso fresco on them!)

Prep Time: 5 minutes Cook Time: 15 minutes Total Time: 20 minutes Servings: 4

Mexican style scrambled eggs with crunchy tortilla chips!

ingredients
  • 1 tablespoon oil (or butter)
  • 1 onion, diced
  • 1 jalapeno pepper, diced (optional)
  • 1 roma/plum tomato, seeded and diced (optional)
  • 8 large eggs, lightly beaten
  • 1/4 cup cottage cheese
  • salt and pepper to taste
  • 1 cup monterey jack cheese (or cheddar), shredded
  • 4 ounces tortilla chips
  • 1 tablespoon cilantro, chopped (optional)
  • 1/4 cup queso fresco (or feta), crumbled (optional)
directions
  1. Heat the oil in a large pan over medium heat, add the onion and jalapeno and cook until tender, about 5 minutes.
  2. Add the tomatoes and cook for 2 minutes.
  3. Add the mixture of the eggs, cottage cheese, salt, and pepper, followed by the cheese.
  4. Let the bottom of the eggs start to set before gently mixing and repeating, until the eggs are mostly cooked but still wet.
  5. Mix in the tortilla chips and continue to cook until the eggs are at the desired level.
  6. Sprinkle on the cilantro and queso fresco and enjoy!
Option: Add 1 poblano pepper, diced, along with the onion.
Option: Add 1 bell pepper, diced, along with the onion.
Option: Use doritos instead of tortilla chips.
Option: Serve topped with avocado, guacamole (link), jalapenos, pickled jalapenos (link), salsa (link), salsa verde (link), sour cream, cheese, diced tomatoes, pico de gallo (link), etc.
Option: Serve with a side of beans or refried beans (link)!

    Wow – you made these look awesome! I'm from Texas so we see Migas at many restaurants, but not very many are done as well as yours. These are perfect – are you maybe a Texan at heart?

    I currently live in Mexico, in a bordering city with Texas, and i follow your blog religiously. I was SUPER excited to see you posted this recipee, ESPECIALLY since I had this for bfast today!!! However the only veggies I mixed were onions, tomato and serrano peppers (a la mexicana).

    And to be extra healthy, you can use cooking spray to sautee the tortillas and vegetables. =)
