Migas are a Mexican style of scrambled eggs with crunchy tortillas mixed in; a super simple and tasty breakfast! This recipe starts out with onions, jalapeno and tomatoes which are cooked in a pan before adding the eggs and cheese and cooking scrambled style. When the eggs are about half way cooked, the tortilla chips are added, so that they soften a little in the remaining moisture in the eggs as they finish cooking, without getting soggy. Although it’s not traditional, I like to add cottage cheese to the eggs before cooking them. Once the migas are cooked you can serve them with your favorite Mexican style toppings! (I like salsa verde (link) and queso fresco on them!)

I LOVE LOVE LOVE migas. This looks great.
I currently live in Mexico, in a bordering city with Texas, and i follow your blog religiously. I was SUPER excited to see you posted this recipee, ESPECIALLY since I had this for bfast today!!! However the only veggies I mixed were onions, tomato and serrano peppers (a la mexicana).
And to be extra healthy, you can use cooking spray to sautee the tortillas and vegetables. =)
Congrats on your blog!!
Oooh, yum. I just got back from Mexico and am missing tortillas with my breakfast!
This looks perfect!
I ate it once and it was so good. Glad I found the recipe here, I'm going to make it for sure.
This was outstanding! I fixed this on a camping trip and the family hasn't stopped bragging on it, thank you for sharing!
