You really can’t go wrong with cheesy potatoes and these Mississippi mud potatoes hits the mark! This recipe is as easy to make as mixing diced potatoes with bacon, mayo, sour cream, onions, garlic, and plenty of cheese before baking until the potatoes are tender and the cheese has melted! To keep things simple I like to go with onion and garlic powder but you can also cook diced onions in the bacon grease along with fresh chopped garlic. The potatoes take some time to bake and if you want to speed it up you can pre-par-boil the potatoes to cook them partially before baking them. This dish can be assembled a day ahead and simply thrown into the oven when ready and it also reheats well!
