Pizza Soup

All of the flavours of a supreme meat lovers pizza, with bacon, sausage, pepperoni, onion, peppers and mushrooms, in soup form!

Pizza is one of my all time favourite foods and the flavours work really well in soup form! This recipe is basically a tomato based soup with pasta, cheese, and your favourite pizza toppings! Some of my go to pizza ingredients include: bacon, sausage, pepperoni, onions, peppers, and mushrooms and this soup has all of them! In addition to all of the meat and veggies, I like to add pasta to make it even heartier! Although it takes a bit of time to make, it’s definitely worth it; pure comfort food in a bowl!

Prep Time: 15 minutes Cook Time: 45 minutes Total Time: 1 hour Servings: 6

All of the flavours of a supreme meat lovers pizza, with bacon, sausage, pepperoni, onion, peppers and mushrooms, in soup form!

ingredients
  • 4 ounces bacon, sliced (optional)
  • 1 pound Italian sausage, casings removed (or ground beef)
  • 4 ounces pepperoni, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 8 ounces mushrooms, sliced
  • 4 cloves garlic, chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups chicken broth (link) (or beef broth (link))
  • 3 cups marinara sauce (link) (or 1 (28 ounce) can diced tomatoes)
  • 2 teaspoons oregano (or Italian seasoning (link))
  • 8 ounces pasta (gluten free for gluten free)
  • 1/4 cup parmigiano reggiano (parmesan cheese), grated
  • 2 tablespoons basil, sliced (or parsley, chopped)
  • salt and pepper to taste
  • 1 cup mozzarella, shredded
directions
  1. Cook the bacon in a large saucepan before setting aside and reserving the grease in the pan.
  2. Add the sausage and pepperoni and cook in the same pan, breaking the sausage apart as it cooks, before setting aside, reserving any grease in the pan.
  3. Add onion, bell pepper, and mushrooms until tender, about 10 minutes.
  4. Add the garlic and red pepper flakes, mix and cook until fragrant, about a minute.
  5. Add the bacon, sausage, pepperoni, broth, marinara sauce, oregano, and pasta, mix, bring to a boil, reduce the heat, and simmer until the pasta is cooked, about 10-15 minutes, mixing every few minutes.
  6. Add the parmesan, mix and let it melt into the broth.
  7. Season with salt and pepper to taste and mix in the basil.
  8. Sprinkle on the mozzarella, cover and let it melt before enjoying! *
Note: Use a store bought jar of marinara sauce to save time.
Option: Add 2 tablespoons tomato paste along with the garlic.
Option: Add 1/2 cup heavy/whipping cream (or milk) along with the parmesan.
Option: Use your favourite pizza topping ingredients!
Note: * You can either add the mozzarella to the pot or you can use oven safe bowls, sprinkle the cheese onto the top of the soup in the bowls and broil to melt the cheese just before serving.
