Chicken and gravy is a classic! There’s just something amazing about the simple combination of chicken and a tasty gravy! The recipe is as simple as cooking the chicken in a skillet followed by making the gravy in the same pan. The gravy is the star of the show and making it in the pan that the chicken was cooked in allows all of the flavour from the chicken cooking to be absorbed into it! The gravy is made with a simple roux made with butter and flour before adding chicken broth (link) and seasoning it with onion, garlic, thyme, rosemary, and sage! (I often like to kick up the flavour a bit by adding a splash of Worcestershire sauce and/or soy sauce.) It only takes about 30 minutes to make chicken and gravy, which is plenty of time to cook some rice or pasta and steam a vegetable for a simple and tasty meal!
Skillet Chicken and Gravy
A quick and easy skillet chicken and gravy!
ingredients
- 3 tablespoons unsalted butter (or oil)
- 1 pound boneless and skinless chicken breasts or thighs, pounded thin or butterflied
- 1 onion, diced
- 2 cloves garlic, chopped
- 1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme, chopped)
- 1/2 teaspoon dried rosemary (or 1 teaspoon fresh rosemary, chopped)
- 1/2 teaspoon ground sage (or 1 teaspoon fresh sage, chopped)
- 3 tablespoons flour (gluten-free for gluten-free)
- 2 cups chicken broth (link)
- 1/2 teaspoon onion powder (optional)
- 1/2 teaspoon garlic powder (optional)
- salt and pepper to taste
directions
- Melt the butter in a large skillet over medium heat, add the chicken and cook until golden brown on both sides and cooked through (165F/73.9C), about 7-10 minutes per side, before setting aside.
- Add the onion and cook until tender, about 5 minutes.
- Add the garlic, thyme, rosemary, and sage, and sprinkle in the flour, mix well, and cook for a minute.
- Add the broth, onion powder, and garlic powder, mix, bring to a boil, reduce the heat and simmer until the gravy thickens, about 3 minutes.
- Season with salt and pepper to taste.
- Add the chicken (and any juices) and cook for 5 minutes.
Option: Add 8 ounces mushrooms, sliced or chopped, along with the onion.
Option: Add 1/4 cup heavy/whipping cream or sour cream to the gravy at the end.
Option: Add 1 teaspoon Worcestershire sauce (gluten-free for gluten-free), along with the broth!
Option: Add 1 teaspoon soy sauce (gluten-free for gluten-free), along with the broth!
Option: Add 1/4 cup parmesan, or pecorino, asiago, etc., grated, at the end, letting it melt into the gravy.
Option: Serve over mashed potatoes (link) (or pasta or rice) along with a steamed vegetable for a quick and easy meal!
