Chicken fajitas are one of my favourite meals and this easy one-pan skillet rice has all of the flavours in a complete meal! This recipe is as easy to make as cooking chicken, onion, and bell peppers, adding some seasoning, rice and broth and simmering until the rice is cooked! Everything is topped off with plenty of melted cheese and it’s served with your choice of fajita fillings!
Skillet Chicken Fajita Rice
Fajita style chicken, peppers and onion in a one-pan rice meal!
ingredients
- 1 tablespoon oil
- 1 pound boneless and skinless chicken breasts or thighs, cut into bite sized pieces
- 1 tablespoon oil
- 1 onion, sliced or diced
- 3 bell peppers, sliced or diced
- 3 cloves garlic, chopped
- 1 tablespoon tomato paste (optional)
- 1 tablespoon taco seasoning (link)
- 2 cups chicken broth (link)
- 1 cup long grained rice
- 2 cups cheese (cheddar and/or monterey jack), shredded
directions
- Heat the oil in a large skillet over medium-high heat, add the chicken and cook, about 10 minutes, before setting aside.
- Add the onions and bell peppers and cook until tender, about 5 minutes.
- Add the garlic, tomato paste, and taco seasoning, mix, and cook until fragrant, about a minute.
- Add the chicken, broth, and rice, mix, bring to a boil, reduce the heat and simmer, covered, until the rice is cooked, about 20 minutes.
- Top with the cheese and let it melt before enjoying!
Option: Add 1 (15 ounce) can beans, along with the broth.
Option: Add 1 cup corn (fresh or frozen), before topping with the cheese.
Option: Serve with your favourite fajita fillings such as sour cream, avocado, guacamole (link), lettuce, tomatoes, pico de gallo (link), cilantro, lime wedges, tortilla chips, tortillas, etc.

A favorite, I add a can of (drained/rinsed) black beans for more protein. And I reduced the cheese (calories). Other than that, perfect.
