Slow Cooker Chicken Teriyaki

Teriyaki chicken that’s as simple as throwing everything into the slow cooker in the morning and it’s ready to go in 5 minutes of effort when you get home at night!

Chicken teriyaki is one of my favourite meals and making it in a slow cooker makes it almost effortless! Teriyaki sauce is a Japanese sauce that combines soy sauce, sake, mirin, and sugar at its base and you can add any other flavours! This recipe is as simple as throwing the chicken and the teriyaki sauce into the slow cooker and cooking! I like to turn the slow cooker on in the morning and in the evening when I get home from work I can simply cook some rice and steam a veggie and I have a super simple and tasty meal!

When you make chicken teriyaki on the stovetop you would normally simmer the sauce until it thickens, so that it clings to the chicken. When the slow cooker chicken teriyaki is done cooking the sauce is rather thin so you can either add 1 tablespoon of cornstarch mixed into 1 tablespoon of cool water to the slow cooker, mix it in, and cook on HIGH for 20 more minutes, or you can transfer the sauce to a pan and simmer it on the stovetop to thicken the sauce!

Teriyaki chicken that’s as simple as throwing everything into the slow cooker in the morning and it’s ready to go in 5 minutes of effort when you get home at night!

ingredients
  • 1 pound boneless and skinless chicken breasts or thighs
  • 1 onion, sliced or diced
  • 1 tablespoon garlic, minced/grated
  • 1 tablespoon ginger, minced/grated
  • 2 tablespoon soy sauce (gluten-free for gluten-free)
  • 2 tablespoon sake (optional)
  • 2 tablespoon mirin (optional)
  • 2 tablespoon sugar
  • 1 tablespoon rice vinegar (optional)
  • 1/2 cup water (or chicken broth (link))
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 1 teaspoon toasted sesame oil (optional)
  • 1 tablespoon toasted sesame seeds (optional)
  • 4 green onions, thinly sliced (optional)
directions
  1. Place the chicken and onion in a slow cooker and pour over the mixture of the garlic, ginger, soy sauce, sake, mirin, sugar, vinegar, and water and cook on LOW for 8-10 hours or on HIGH for 3-4 hours.
  2. Remove the chicken and shred.
  3. Pour the liquid and everything else in the slow cooker into a saucepan, add the mixture of the 2 tablespoons of water and the cornstarch, bring to a boil, reduce heat and simmer until the sauce thickens, about 3-5 minutes.
  4. Mix the chicken, sauce, sesame oil, sesame seeds and green onions and enjoy!
Option: Replace the sugar with brown sugar, maple syrup, honey, etc.
Option: Add vegetables!
