Spinach and feta quinoa is one of my favourite side dishes and when I made it recently I thought I would take the opportunity to update the recipe and photos!
This dish is based on spanakorizo (Greek spinach rice) with the rice replaced with quinoa. The recipe is as easy as cooking an onion before adding the quinoa and liquid and simmering until the quinoa is cooked. Spinach, feta and plenty of fresh herbs are then mixed in along with a splash of lemon juice for a bright and fresh dish! I like to make this as a side or as a light meal; you can easily add some more veggies or even chickpeas!

Spinach and Feta Quinoa
A Greek style quinoa with spinach, feta and plenty of fresh herbs!
ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, chopped
- 1 cup quinoa
- 2 cups vegetable broth (link) (or chicken broth (link) or water)
- 10 ounces baby spinach
- 2 tablespoons parsley, chopped
- 2 tablespoons dill, chopped
- 2 green onions, thinly sliced
- 1 tablespoon lemon juice
- 1/4 cup feta, crumbled
- salt and pepper to taste
directions
- Heat the oil in a large pan over medium heat, add the onion and cook until tender, about 5-7 minutes.
- Add the garlic and cook until fragrant, about a minute.
- Add the quinoa and broth, bring to a boil, reduce the heat and simmer, covered until the broth has been absorbed, about 15 minutes, before letting sit, covered for 5 minutes.
- Miox in the spinach and let it wilt in the residual heat.
- Mix in the parsley, dill, green onions, lemon juice, and feta.
- Season with salt and pepper to taste and enjoy!
Option: Add 1 zucchini, diced or shredded
Option: Add a leek, thinly sliced, or replace the onion with a leek.
Option: Add 2 cups broccoli, cut into florets.
Option: Add 1 (15 ounce) can chickpeas, rinsed and drained.
Option: Add mint, chopped!
Option: Replace the feta with chevre/goat cheese, crumbled.

In step 4, it says "4. Add the and spinach" – what goes before the "and"? Or is it just supposed to be "add the spinach?" I have quite a bit of spinach lying around and I intend to make this asap!
I love quinoa, and using it in salads like this is one of my favorite ways to cook with it! This type of recipe is perfect to bring to work for lunch, too. Sounds great!
