Street Corn Buffalo Chicken Dip

A hot melted cheese dip with buffalo chicken and sweet corn!

Buffalo chicken wings (link) are chicken wings that are cooked until crispy and then tossed in buffalo sauce, which is the simple combination of hot sauce and melted butter, and they are one of my favourite snacks to enjoy while watching the game! The flavours of buffalo chicken wings work really well in a hot melted cheese dip and buffalo chicken dip (link) is a recipe that I make often! This is a version of the dip that I have been enjoying recently where corn is added to the dip and its sweetness nicely balances and compliments the spiciness of the hot sauce! Buffalo wings are often served with a side of blue cheese dressing (link) or ranch dressing (link) to dip the wings into and although I generally prefer adding blue cheese to regular buffalo chicken dip, ranch works well in this dip! This sweet corn buffalo chicken dip will definitely be on my game day menu!

Street Corn Buffalo Chicken Dip

Prep Time: 5 minutes Cook Time: 25 minutes Total Time: 30 minutes Servings: 8

A hot melted cheese dip with buffalo chicken and sweet corn!

ingredients
  • 2 cups chicken, cooked and shredded
  • 2 cups corn (fresh, frozen or drained canned)
  • 1/2 cup hot sauce (or buffalo hot sauce) (such as Frank’s Red Hot)
  • 8 ounces cream cheese, room temperature
  • 1/4 cup mayonnaise
  • 1/4 cup ranch dressing (link) (or sour cream)
  • 1 tablespoon lime juice (optional)
  • 2 cups cheese (such as cheddar and/or jack), shredded
  • 2 green onions, sliced (optional)
directions
  1. Mix the chicken, corn, hot sauce, cream cheese, mayo, ranch dressing, lime juice, and cheese, place in a baking dish and bake in a preheated 350F/180C oven until the cheese has melted and the sides are bubbling, about 20-30 minutes.
  2. Enjoy!
Slow Cooker: Mix everything, place it in the slow cooker and cook until the cheese is nice and melted about 1-2 hours on high or 2-4 hours on low.
Note: Hot sauces vary in heat, use as much of your favourite hot sauce as required to get the level of heat that you desire!
Option: Mix 1-2 tablespoons melted butter into the hot sauce before adding it to the dip.
Option: Add 1 tablespoon cilantro, chopped.
Option: Serve garnished with crumbled cotija cheese.
Option: Serve garnished with a light sprinkle of chili powder.
Option: Serve garnished with a drizzle of hot sauce.
Option: Serve garnished with a drizzle of ranch dressing.
Option: Serve garnished with lime wedges.
