Chopped cheese sandwiches (link) are a classic where ground beef is pressed onto the grill, seasoned, let to caramelize before flipping, and chopping, before topping with cheese and sliding it into a bun with lettuce, tomato and mayo. This is a slightly different, taco themed, take where the beef is seasoned with taco seasoning (link) and the bun is filled with avocado and pico de gallo, in addition to the lettuce and mayo! These taco chopped cheese sandwiches are so quick and easy to make and even better than the original!
Taco Chopped Cheese Sandwich
Taco themed chopped cheese sandwiches! A tasty twist on a classic!
ingredients
- 1 tablespoon oil (or bacon grease or lard)
- 1 cup onion, diced
- 1 1/2 pounds ground beef
- 1 tablespoon taco seasoning (link)
- 1 tablespoon soy sauce (optional) (gluten-free for gluten-free)
- 1 tablespoon Worcestershire sauce (optional) (gluten-free for gluten-free)
- 4 slices cheddar cheese (or Monterey Jack)
- 4 hoagies/buns/rolls, cut in half (optionally toasted) (gluten-free for gluten-free)
- 4 tablespoon mayonnaise
- 1 avocado, mashed
- 2 cups lettuce, shredded
- 1 cup pico de gallo (link) or tomatoes, diced
directions
- Heat the oil in a large skillet over medium-high heat, add the onion, and cook until tender, about 5 minutes, before setting aside.
- Place the ground beef in the pan, press it down into the pan, sprinkle on the taco seasoning, and let it cook until the bottom turns a deep golden brown, about 5-8 minutes.
- Flip the beef, press it into the pan, and cook until deep golden brown, about 5-8 minutes.
- Chop the beef to break it apart, add the onion, soy sauce, and Worcestershire sauce, and cook until the beef is cooked.
- Place the slices of cheese on top of the beef and let it melt before turning off the heat.
- Divide the chopped cheese beef between the hoagies, along with the mayo, mashed avocado, lettuce, and pico de gallo, and enjoy!
Option: Add chopped chipotle chilies in adobo, in Step 4.
Option: Mix a splash of lime juice and a pinch of salt into the mashed avocado!
Option: Replace the mashed avocado with 1/4 cup guacamole (link)!
Option: Use your favourite taco toppings as sandwich fillers!
