Around this time of year I start thinking about roast turkey dinners with all of the fixings; sometimes I want the flavours of that full meal without all of the work and this turkey stuffing meatloaf is a great option! This is a pretty simple meatloaf recipe where ground turkey is used for the meat, along with eggs as a binder and instead of breadcrumbs this recipe uses a dry stuffing mix! I like to add some of the aspects of a fresh homemade stuffing by cooking onions and celery in butter before adding plenty of fresh herbs including rosemary, sage, thyme and parsley. Once the onions and celery are cooked it’s as easy as mixing everything and baking! You can either bake this meatloaf in a loaf pan or you can shape it as desired on a baking pan. Feel free to serve this turkey stuffing meatloaf with gravy, mashed potatoes, and cranberry sauce for an easy holiday themed meal!
