Tzatziki is a Greek style sauce made with yogurt, cucumber, garlic, lemon and fresh herbs and it’s one of my favourite summer foods! Chicken salad, cooked chicken in a creamy mayo dressing, is another summer classic and if you replace the mayo dressing with tzatziki, it gets even better! This is a super simple recipe that takes a basic chicken salad recipe and uses a tzatziki sauce for teh dressing!
Tzatziki Chicken Salad
A light and tasty chicken salad in a cool and creamy tzatziki sauce!
ingredients
- 1/2 cup plain Greek yogurt
- 1/2 cup cucumber, peeled, seeded, grated, and squeezed to drain
- 2 cloves garlic, grated
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons lemon juice (~1/2 lemon)
- 1 teaspoon lemon zest (optional)
- salt to taste
- 4 cups chicken, cooked and shredded or chopped
- 1 cup cucumber, diced
- 1/2 cup celery, diced
- 1/4 cup red onion, diced
- 1/4 cup feta, crumbled (optional)

- Mix everything well.

Option: Add 1 cup tomato, diced.
Option: Add 1/4 cup kalamata olives, sliced
Option: Add 2 tablespoons mint, chopped.
Option: Replace the red onions with green onions.
