Tzatziki Potato Salad

A cool and creamy potato salad with a Tzatziki (Greek style cucumber) sauce and crumbled feta!

Tzatziki (aka Greek cucumber salad) and potato salads are two of my favourite summer dishes and it turns out that they are great together! This recipe is basically a potato salad mixed with cool and creamy tzatziki! The main ingredient is the potatoes and it’s mixed with a simple tzatziki sauce where half of the plain Greek yogurt is replaced with mayonnaise, which is a common dressing ingredient in potato salads. I like to add crumbled feta cheese to add saltiness and sliced green onions finish everything off. This tzatziki potato salad is the perfect summer side dish for any meal!

Tzatziki Potato Salad

Prep Time: 10 minutes Cook Time: 15 minutes Total Time: 25 minutes Servings: 4

A cool and creamy potato salad with a Tzatziki (Greek style cucumber) sauce and crumbled feta!

ingredients
  • 1 1/2 pounds potatoes, diced (optionally peeled)
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise (or plain greek yogurt)
  • 1/2 cup cucumber, peeled, seeded, grated, and squeezed to drain
  • 1 clove garlic, grated
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 2 tablespoons lemon juice (~1/2 lemon)
  • salt and pepper to taste
  • 1/4 cup feta, crumbled (optional)
  • 2 green onions, thinly sliced
directions
  1. Place the potatoes in a large pot, cover with water, add a pinch of salt, bring to a boil, reduce the heat and simmer until the potatoes are just tender, about 8-10 minutes, before removing from water and letting them cool.
  2. Mix the yogurt, mayo, cucumber, garlic, dill, mint, lemon juice, salt and pepper.
  3. Mix the potatoes, cucumber mixture, feta and green onions and enjoy!
Note: Pretty much any potatoes can be used for potato salad! Russet style potatoes will start to break down and lose their shape while having a creamy texture. White and Red potatoes will retain their shape well and have a solid texture. Golden/yellow potatoes are somewhere in between.
Option: Use your favourite herbs!
Option: Add 1/4 cup red onions, diced or sliced.
Option: Add 1/4 cup kalamata olives.
Tip: This salad tastes great just made and the flavours get better after chilling out in the fridge for a couple of hours!
