White Chili Chicken Cheese Dip

A hot melted cheese dip with all of the flavours of white chicken chili!

If you’re looking for a tasty snack to eat while watching The Game, this white chili chicken cheese dip is a great option! It takes all of the amazing flavours of the white chicken chili and places them in a hot melted cheese dip for your tortilla chip scooping pleasure! The melted cheese base if made with cream cheese, sour cream and plenty of melty cheese, such cheddar, jack, etc. The chili ingredients of chicken and beans fill out the dip and the flavour comes from the salsa verde and green chilies! Once the dip is baked until melted, ooey gooey, and good, garnish it with your favourite chili toppings, like cilantro, green onions, jalapenos, avocado, etc, grab a bag of tortilla chips and dig in!

White Chili Chicken Cheese Dip

Prep Time: 10 minutes Cook Time: 40 minutes Total Time: 50 minutes Servings: 8

A hot melted cheese dip with all of the flavours of white chicken chili!

ingredients
  • 1 tablespoon oil
  • 1 cup onion, diced
  • 1 jalapeno, diced
  • 2 cloves garlic, chopped
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 cup salsa verde
  • 1 cup chicken, cooked and sliced or shredded
  • 1 (14.5 ounce) can white beans, drained and rinsed
  • 8 ounces cream cheese, warmed
  • 1 cup sour cream
  • 2 cups cheese (white cheddar and/or monterey jack), shredded, divided
directions
  1. Heat the oil in a large oven safe pan over medium heat, add the onion and jalapeno and cook until tender, about 3-5 minutes.
  2. Add the garlic, paprika, and cumin, and cook until fragrant, about a minute.
  3. Add the salsa verde, chicken, beans, cream cheese, sour cream and half of the shredded cheese and mix, before sprinkling on the remaining shredded cheese.
  4. Bake in a preheated 350F/180C oven until the sides are bubbling and the top is golden brown, about 20-30 minutes.
Option: Serve garnished with chopped cilantro, green onions, jalapeno, avocado, lime, etc.
Option: Add cup corn (fresh, or frozen, or canned).
Option: Add 1 (4 ounce) can diced green chilies.
Tip: Assemble the dip a day ahead of time, store in the fridge and bake just before serving!
